MINESTRONE SOUP SIMPLE RECIPE
Mistrone is a Broth of italian origin made with vegetables, often with the addition of pasta or rice. Common ingredients include beans, onion, celery, carrot, stock and tomatoes
INGREDIENTS
20 gms Onion
5 gms garlic
50 gms Carrot
25 gms Leeks
25 gms Celery
50 gms Red kidney beans
50 gms Potato
50 gms Tomato concase
50 lt Tomato puree
10 gms Macaroni or spaghetti
1 lt Vegetable stock
25 gms Parmesan cheese
to taste Salt
to taste White pepper
5 gms Butter
1 tsp thyme or basil
METHOD
1. Chop onion and garlic finely, cut the peeled and wash carrots and potatoes into small dices. Also cut leeks, celery, beans and cabbage into dices
2. Sauté lightly the onion and Garlic till Pink, add the remaining vegetables, except cabbage, which is to be added later, cook gently without coloring
3. Add tomato puree, tomato concase and stock in this order. Simmer for approximately 20 min
4. Add the cabbage and pasta or broken spaghetti and simmer gently until all vegetables are cooked
5. Correct the seasoning and add fresh basil leaves
6. Enjoy hot garnish with grated parmesan cheese
