CHOCOLATE TERRINE EASY RECIPE
INGREDIENTS
188 gm Dark Chocolate
50 gm Egg
1 tsp Orange essence
50 gm Gelatin
20 gm Water
10 gm Cocoa powder (optional for garnish)
METHOD
1. Soak the gelatin and melt it on a double boiler
2. Melt chocolate over double boiler
3. Separate eggs, Whisk egg whites until they form soft peaks
4. Add the orange essence to the chocolate and beat it. The chocolate will become very thick
5. Add cooking cream and gelatin into the chocolate
6. Beat the egg yolks into the chocolate, one or two at a time, until well blend
7. Beat the egg white into the mixture. Use a stiff whip to beat them in. Do not try to fold them as the mixture is too stiff
8.In order to create the necessary smooth testure, force the mixture through a sieve to remove lumbs in the blended chocolate or egg
9. Pour some of the chocolate into the prepared pan to fill them about halfway. Rap the pans on the bench sharply to remove air bubbles. Fill with the remaining chocolate and again remove air bubbles
10. Cover and refrigerate over night.
