CHETTINAD CHICKEN RECIPE
INGREDIENTS
300 gms Chicken curry cut
50 gms. Onion
50 gms. Tomato
20 gms. Garlic
5 gms. Curry leaves
5 gms. Green chilli
4 no. Green cardamom
2 no. Black cardamom
1 no. Cinnamon
1 tsp. Fennel
1 tsp. Cumin seeds
1 tsp. Coriander seeds
2 no. Star anise
2 tsp. Black pepper
5 no. Cloves
5 tbsp. Fresh coconut
3 no. Dry chilli
30 ml. Coconut oil
2 tsp. Fresh coriander
To taste. Salt
1 tbs. Turmeric powder
1 tsp. Red chilli powder
2 Tsp. Coriander powder
1 tsp. Mustard seeds
5 ml. Lemon juice
METHOD
1. Cut the chicken and wash it, marinate with salt, turmeric, red chilli and lemon juice
2. Put some oil in a pan, add the whole spices, with garlic, ginger and grated coconut and roast it till golden colour
3. Take a pan, add coconut oil,put mustard seeds, as they crackle put chop onion and cook till light brown, now add the powder masala
4.put chicken and cook , now put the chop tomatoes and cook till they mash or masala leaves the oil
5. Grind the dry roast masala with some water into a fine paste and add into the chicken
6. Cook the whole mix till it leaves oil, add some water and cover the pan for 10 minutes
7. Check whether the chicken is cook , now garnish with some lemon juice and chop Coriander
