GUMBO GUMBO SOUP RECIPE
INGREDIENTS
1. Onions Grams 75
2. Garlic Grams 25
3. Celery Grams 30
4. Boneless chicken breast Grams 100
5. Chicken stock Lt 1
6. Tomatoes Grams 40
7. 3 bell peppers Grams 25
8. Bacon Grams 40
9. Okra Grams 60
10. Oil Ml 15
11. Parsley For garnish
12. Tomato puree Grams 20
13. Salt To taste
14. Black pepper To taste
15. Rice Grams 15
METHOD
1. Cut dices (not very big) of onions, bell peppers, blanched+ deseeded tomatoes, chicken breast, bacon, okra.
2. In a sauce pan, heat little oil, saute onion and garlic but do not give colour. Add celery and cook for a minute till flavour comes out.
3. Add bacon and cook till crispy. Stir continuously. Add rice.
4. Add few bell peppers and cook. Add the chicken dices and stir. Add tomato puree and cook that well so that sourness goes.
5. Add stock and cook on medium flame. Add okra, left over bell peppers, seasoning and stir.
6. When boil comes, add the tomatoes and turn the flame on low, cover and cook till all vegetables are cooked well. Correct seasoning.
7. Garnish with chopped parsley and enjoy hot
