PEANUT SAUCE
INGREDIENTS
1. Crushed roasted peanuts Grams 200
2. Rice vinegar Ml 45
3. Castor sugar Grams 45
4. Red curry paste Grams 5
5. Fish sauce/light soya sauce Ml 5
6. Chopped garlic Grams 10
7. Coconut milk Ml 100
METHOD
1. In a pan, add vinegar, sugar, soya sauce and little water. When sugar is dissolved, add chopped garlic and cook. Add crushed peanuts and cook till it soaks all the water.
2. Then add coconut milk and red curry paste. Cook for 2 min.
3. Grind this mixture with very little coconut milk or water.
4. It should be a smooth paste.
5. Enjoy with chicken satay.
