It is a hot and healthy soup in which pumpkin marinate with herb and spices slowly roasted in the pre heat oven and blend with stock and finish with cream
INGREDIENTS
200 gms Red pumpkin
15 gms
Butter5 gms Oil
3 gms Garlic
2 pinch Cumin seeds
150 ml White stock
1 tbsp Cream
seasoning salt and black pepper
garnishing parsley
METHOD
1. Prepare the pumpkin- deseed, peeled, coarsely chopped
2. Pre heat oven to 220 C. combine the pumpkin and half the butter in a large roasting pan
3. Season with salt and pepper. Bake in preheat oven for 20 minute(until tender)
4. Add oil in a pan, add garlic and cumin seeds and cook for 5 min
5. Add roasted pumpkin and stock and bring it to a boil for 10 min
6. Blend it and pass through a sieve
7. Drizzle cream and garnish with chopped parsley
